Makes 4 servings

  • 1/2 cup char siu sauce or hoisin sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons Chinese rice wine or dry sherry
  • 1 clove garlic, minced
  • 1 walnut-size shallot, minced

  • 4 boneless loin pork chops, cut 1-inch thick

  • 1 teaspoon vegetable oil
  • 1/3 cup chicken broth

  1. Combine marinade ingredients in a medium bowl; mix well. Add pork chops and turn to coat. Let stand for 10 minutes or marinate in the refrigerator for up to 4 hours; turn occasionally in marinade.
  2. Place a grill pan over medium-high heat until hot; brush with oil. Place pork chops in pan, reserving marinade. Cook, turning occasionally and basting with marinade, until meat is no longer pink in the center, about 5 minutes on each side.
  3. Combine reserved marinade and broth in a small saucepan. Bring to a boil; reduce heat and simmer until sauce thickens slightly, about 3 minutes.
  4. Brush sauce over pork chops and serve.
