Noodle Pancakes with Meat Sauce

Makes 4 servings

Sauce

  • 1/2 cup chicken broth
  • 2 tablespoons oyster-flavored sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/8 teaspoon white pepper

Marinade

  • 2 teaspoons soy sauce
  • 2 teaspoons Chinese rice wine or dry sherry
  • 1 teaspoon cornstarch

  • 1/2 pound lean ground turkey
  • 1/2 pound fresh egg noodles or angel hair pasta
  • 3 tablespoons cooking oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon crushed red pepper
  • 1 Chinese sausage (about 2 ounces), coarsely chopped
  • 1/2 cup coarsely chopped water chestnuts
  • 2 green onions (including tops), finely chopped
  • 2 1/2 teaspoons cornstarch mixed with 5 teaspoons water

Directions

  1. Combine sauce ingredients in a small bowl; set aside.
  2. Combine marinade ingredients in a medium bowl. Add turkey, mix well and let stand for 30 minutes.
  3. Cook noodles according to package directions until tender but firm to the bite. Drain, rinse under cold running water and drain again.
  4. Preheat oven to 200-degrees F. Place a wide nonstick frying pan over medium-high heat until hot. Add 2 teaspoons of the cooking oil, swirling to coat surface. Spread half the noodles over bottom of pan. Press noodles into a firm pancake about 8 inches in diameter. Cook until bottom is golden brown, about 5 minutes. With a wide spatula, flip pancake over. Add 1 more teaspoon of cooking oil around edges of pan and cook until other side is golden brown, about 3 more minutes. Remove pancake to a large heatproof serving platter and keep warm in the oven. Repeat with the remaining noodles and 1 tablespoon cooking oil.
  5. Place a wok or wide frying pan over high heat until hot. Add remaining 1 tablespoon oil to wok. Add garlic, red pepper and sausage; cook, stirring, for 1 minute. Add turkey and stir-fry until lightly browned and crumbly, about 2 minutes. Add water chestnuts and green onions and cook for 1 minute. Stir in sauce and cornstarch solution. Cook, stirring, until sauce boils and thickens. Spoon meat mixture over noodle pancakes.
