I just started using this knife instead of a standard 8in kitchen knife. It's awesome. It came with a very sharp edge. It has easily sliced through roasts and trimmed the tough fat off of cold raw meat. It is well balanced and the additional weight makes a difference for getting through tough fat. For all around utility, I would point out preparing, chopping, and roasting garlic. The flat side easily crushes garlic to take the skin off. The edge chops the garlic very fine. And the flat side again is big enough to transfer a lot of garlic or any vegetable to the pan without multiple trips. Most of these things I think describe any Chinese knife. A few things are unique to this knife in particular. It has an ergonomically shaped handle. It is comfortable to hold, not slippery or cold like metal, and very nice to look at. The thickness of the top of the blade is wide enough to chop with you finger on top without hurting your finger over time. And the weight is enough to crush and maybe do some like cleaving (chicken/duck) without being too heavy for daily use. The knife is still new so I can not attest to long term usage. But it seems to be good quality. When I first looked at the knife it was slightly intimidating because of its resemblance to an axe or hatchet. But after 30min of use I don't know how I ever lived without it. (30 Mar 2017, 14:49)
