Ingredients
marinating sauce:
- ¼ cup soy sauce
- 3 tablespoons rice wine
- 2 tablespoons sugar
- ¾ cup strong black tea or Lutien Lotus Leaf Tea
garnish:
- ½ teaspoon Sichuan peppercorn powder
- ½ teaspoon chili powder
- ¼ teaspoon salt

Instructions
- Bring a pot of water to boil, carefully lower eggs into pot. Lower heat and simmer for 7 minutes. Lift eggs out of hot water and place in an ice-water bath.
- When cool enough to handle, peel shells and place eggs into a sealable bag.
- Combine all marinating sauce ingredients, stirring to dissolve sugar. Pour sauce into bag with eggs. Squeeze out all the air and seal bag.
- Let eggs marinate for 1 – 2 hours. Remove and slice in half to serve. Garnish with pepper chili salt.
